Main Ingredients:

  • 2 teaspoons vegetable oil
  • 1 lb boneless skinless chicken thighs, cut into 1 inch pieces
  • 1 red bell pepper, seeded and cut into 1 inch pieces
  • 1 cup pineapple chunks, fresh or canned
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 3/4 cup pineapple juice
  • 1/4 cup low sodium soy sauce
  • 1/3 cup low sodium chicken broth
  • 1/3 cup hoisin sauce
  • 1/4 cup brown sugar
  • 2 tsp cornstarch
  • 2 tsp sesame seeds
  • 1 tbsp sliced green onions
  • Salt and pepper to taste

Instructions

  1. Cook Chicken: Heat oil in a pan, season and cook chicken until done.
  2. Add Vegetables: Add bell pepper, pineapple, ginger, and garlic, cook until tender.
  3. Make Sauce: Whisk together pineapple juice, soy sauce, broth, hoisin sauce, and brown sugar.
  4. Thicken Sauce: Stir in cornstarch mixture and simmer until thickened.
  5. Serve: Sprinkle with sesame seeds and green onions before serving.
