Main Ingredients:
- 2 teaspoons vegetable oil
- 1 lb boneless skinless chicken thighs, cut into 1 inch pieces
- 1 red bell pepper, seeded and cut into 1 inch pieces
- 1 cup pineapple chunks, fresh or canned
- 1 tsp minced garlic
- 1 tsp minced ginger
- 3/4 cup pineapple juice
- 1/4 cup low sodium soy sauce
- 1/3 cup low sodium chicken broth
- 1/3 cup hoisin sauce
- 1/4 cup brown sugar
- 2 tsp cornstarch
- 2 tsp sesame seeds
- 1 tbsp sliced green onions
- Salt and pepper to taste
Instructions
- Cook Chicken: Heat oil in a pan, season and cook chicken until done.
- Add Vegetables: Add bell pepper, pineapple, ginger, and garlic, cook until tender.
- Make Sauce: Whisk together pineapple juice, soy sauce, broth, hoisin sauce, and brown sugar.
- Thicken Sauce: Stir in cornstarch mixture and simmer until thickened.
- Serve: Sprinkle with sesame seeds and green onions before serving.
