Description

A unique twist on classic breakfast eggs, this Pizza Eggs recipe combines the flavors of pizza with the protein-packed goodness of eggs. Perfect for a hearty and delicious breakfast or brunch option.


Ingredients

  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top

Instructions

  1. Prepare the eggs: Crack the eggs into a bowl and beat lightly with a fork. Season with salt and pepper.
  2. Cook the eggs: Heat a non-stick skillet over medium heat. Pour in the beaten eggs and cook until the edges start to set.
  3. Add toppings: Sprinkle grated cheese over the eggs, spoon passata on top, add slices of salami, and sprinkle with mixed herbs.
  4. Finish cooking: Cover the skillet and cook until the cheese melts and the eggs are cooked to your liking.
