Main Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 2 teaspoons taco seasoning
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 cups black beans
  • 1 1/2 cups frozen corn
  • 2 cups salsa
  • 1 1/2 cups quinoa
  • 3 cups water
  • 1 cup vegan cheese

Optional add-ins:

  • 1 medium avocado
  • 2 limes cut into wedges
  • 1/4 cup cilantro

Instructions

  1. Saute Aromatics: Heat olive oil in a pot, saute onion, garlic, cumin, salt, taco seasoning, and red pepper flakes.
  2. Add Ingredients: Stir in black beans, corn, salsa, quinoa, and water. Bring to a boil.
  3. Simmer: Reduce heat, cover, and simmer until quinoa is cooked.
