Description
This traditional Jewish dish is a delicious baked casserole made with grated potatoes and onions, bound together with eggs and seasoned with salt and pepper.
Ingredients
– 1 tablespoon vegetable oil
– 10 medium potatoes, peeled and grated
– 2 medium onions, peeled and grated
– 5 large eggs
– 1/3 cup vegetable oil
– 2 teaspoons salt
– 1 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish with vegetable oil.
2. In a large bowl, mix together the grated potatoes, onions, eggs, ⅓ cup of vegetable oil, salt, and black pepper until well combined.
3. Pour the mixture into the prepared baking dish and smooth the top.
4. Bake for 1 hour or until the top is golden brown and crispy.
5. Serve hot and enjoy!
Notes
– For a crispy top, broil the kugel for an additional 5 minutes after baking.
– Add a sprinkle of fresh herbs like parsley or dill for extra flavor.
