Description

This flavorful Red Beans and Rice recipe combines tender red beans, savory andouille sausage, and aromatic Cajun spices for a hearty and satisfying meal.


Ingredients

Main Ingredients:

  • 1 lb dried red beans or kidney beans
  • 1 1/2 tablespoons vegetable oil or lard
  • 10 ounces andouille sausage sliced in half inch rounds
  • 1 medium yellow onion chopped
  • 2 ribs celery chopped
  • 1 medium green bell pepper chopped
  • 3 cloves garlic minced

Seasonings:

  • 2 teaspoons dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cayenne pepper (more or less to taste)
  • 2 bay leaves

Additional:

  • 4 cups low-sodium chicken broth
  • 3 cups cooked rice for serving
  • hot sauce (optional)

Instructions

  1. Soak the beans: Rinse and soak the beans overnight.
  2. Cook sausage: Brown andouille sausage in oil.
  3. Saute vegetables: Cook onion, celery, and bell pepper until soft.
  4. Add seasonings: Stir in garlic, parsley, thyme, oregano, paprika, Cajun seasoning, black pepper, and cayenne.
  5. Cook beans: Add beans, bay leaves, and broth, simmer until tender.
  6. Finish dish: Add sausage back in, simmer until beans are mashable. Serve over rice.

Notes

  • For a quicker version, use canned beans and skip soaking step.
  • The dish tastes even better the next day.
  • Leftovers can be stored in the fridge for up to 4 days.
