Description

Ritz Chicken Casserole is a comforting and creamy dish loaded with tender chicken, egg noodles, and a cheesy Ritz cracker topping. It’s the perfect easy weeknight meal for the whole family to enjoy.

Main Casserole:

  • 23 tbsp olive oil
  • 2 stalks celery chopped
  • 1 red bell pepper chopped
  • 1 medium onion chopped
  • 1 tbsp minced garlic
  • 2 10.5 oz cans cream of chicken soup
  • 1 cup half and half
  • 2 cups sharp cheddar shredded
  • 3 cups egg noodles cooked
  • 1.5 pounds chicken breast cooked and shredded
  • 1 tbsp parsley
  • Salt and Pepper to taste

Topping:

  • 1 sleeve Ritz crackers
  • 1 cup sharp cheddar shredded
  • 4 tbsp butter melted

Instructions

  1. Preheat Oven: Preheat the oven to 350°F.
  2. Sauté Vegetables: In a skillet, sauté celery, bell pepper, onion, and garlic in olive oil until softened.
  3. Mix Casserole Ingredients: In a bowl, combine sautéed vegetables, cream of chicken soup, half and half, cheddar cheese, cooked noodles, shredded chicken, parsley, salt, and pepper.
  4. Prepare Topping: Crush Ritz crackers and mix with cheddar cheese and melted butter.
  5. Assemble Casserole: Spread the casserole mixture in a baking dish and top with the Ritz cracker topping.
  6. Bake: Bake for about 30 minutes or until bubbly and golden brown.
  7. Serve: Let it cool slightly before serving.
