			For the Roasted Beets:
- 4 medium-sized beets, trimmed and scrubbed
 - 1 tablespoon olive oil
 - Salt and freshly ground black pepper, to taste
 
For the Goat Cheese Mixture:
- 1 cup goat cheese, softened
 - 1/2 cup cream cheese, softened
 - 1 tablespoon honey
 - 1 tablespoon lemon juice
 - Salt and freshly ground black pepper, to taste
 
For Assembly:
- 1/2 cup chopped pistachios, toasted
 - 2 tablespoons chopped fresh parsley
 - 1 tablespoon chopped fresh chives
 - Fresh greens or crackers, for serving
 
Instructions
- Roast the Beets: Preheat the oven to 400°F. Toss beets with olive oil, salt, and pepper. Roast for 45-60 minutes until tender. Let cool, then peel and dice.
 - Make the Goat Cheese Mixture: In a bowl, combine goat cheese, cream cheese, honey, lemon juice, salt, and pepper. Mix until smooth.
 - Assemble the Log: Spread goat cheese mixture on a sheet of plastic wrap, top with roasted beets, pistachios, parsley, and chives. Roll into a log shape. Refrigerate until firm.
 - Serve: Unwrap and serve with fresh greens or crackers.
 
Notes
- You can customize this recipe by adding other herbs or nuts to the goat cheese mixture.
