Description

This Romanian Slow Roasted Caramelized Cabbage recipe combines the sweetness of caramelized cabbage with the tanginess of sauerkraut and tomatoes, all slow-roasted to perfection.

Main Ingredients:

  • ½ head cabbage sliced into thin strips
  • 500 grams sauerkraut well drained
  • 7 medium sized tomatoes diced
  • 1 carrot sliced
  • 3 yellow onions finely diced (or substitute other onions)
  • 8 cloves garlic sliced
  • 1 tablespoon red chilli pepper with seeds sliced thinly
  • 1 tablespoon dried summer savory or substitute dried thyme
  • ⅓ cup vegetable oil
  • 1.5 tablespoons smoked paprika
  • 3 bay leaves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 handful fresh thyme or substitute dried thyme or more dried summer savoury

Instructions

  1. Prep the Ingredients: Slice the cabbage, drain the sauerkraut, dice the tomatoes, slice the carrot, onions, garlic, and chilli pepper.
  2. Combine Ingredients: In a large roasting pan, mix all the vegetables, herbs, spices, and oil.
  3. Roast: Cover with foil and roast in a preheated oven at 350°F for 2-3 hours, stirring occasionally.
  4. Serve: Remove bay leaves and thyme sprigs before serving.

Notes

  • This recipe can be made in advance and reheated before serving.
  • Adjust the spice level by adding more or less red chilli pepper.
