Description
This Romanian Slow Roasted Caramelized Cabbage recipe combines the sweetness of caramelized cabbage with the tanginess of sauerkraut and tomatoes, all slow-roasted to perfection.

Main Ingredients:
- ½ head cabbage sliced into thin strips
- 500 grams sauerkraut well drained
- 7 medium sized tomatoes diced
- 1 carrot sliced
- 3 yellow onions finely diced (or substitute other onions)
- 8 cloves garlic sliced
- 1 tablespoon red chilli pepper with seeds sliced thinly
- 1 tablespoon dried summer savory or substitute dried thyme
- ⅓ cup vegetable oil
- 1.5 tablespoons smoked paprika
- 3 bay leaves
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 handful fresh thyme or substitute dried thyme or more dried summer savoury
Instructions
- Prep the Ingredients: Slice the cabbage, drain the sauerkraut, dice the tomatoes, slice the carrot, onions, garlic, and chilli pepper.
- Combine Ingredients: In a large roasting pan, mix all the vegetables, herbs, spices, and oil.
- Roast: Cover with foil and roast in a preheated oven at 350°F for 2-3 hours, stirring occasionally.
- Serve: Remove bay leaves and thyme sprigs before serving.
Notes
- This recipe can be made in advance and reheated before serving.
- Adjust the spice level by adding more or less red chilli pepper.
