  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs

  • Vegetable oil for frying

For the Dipping Sauce:

  • 1/2 cup powdered sugar

Instructions

  1. Soak Pineapple: Soak pineapple rings in dark and coconut rums for at least 1 hour. Pat dry.

  3. Fry Rings: Fry rings in hot oil until golden brown. Drain on paper towels.
  4. Prepare Sauce: Mix cream cheese, powdered sugar, and rum until smooth for dipping.

Notes

  • You can adjust the sweetness of the dipping sauce by adding more or less powdered sugar to suit your taste preferences.
