Description

This Satay Crispy Rice Salad is a flavorful combination of crispy rice, tender chicken, crunchy vegetables, and a creamy peanut satay dressing. It’s a delicious and satisfying meal or side dish that’s perfect for lunch or dinner.


Ingredients

For the salad:

  • 2 cups cooked long-grain rice
  • 1 tablespoon sesame oil
  • 1 tablespoon chilli oil
  • 1 tablespoon soy sauce
  • 2 cooked chicken breasts, chopped or shredded
  • 1 cup podded edamame beans
  • 3 scallions, finely sliced
  • 1 cucumber, diced
  • 1 tablespoon sesame seeds
  • A handful of Thai basil, chopped
  • A handful of mint leaves, chopped
  • A handful of cilantro, chopped
  • 1/3 cup roasted peanuts, crushed
  • 1 red chilli, finely sliced (optional)

For the peanut satay dressing:

  • 1/2 cup natural peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons fish sauce
  • 1 tablespoon sweet chilli jam
  • 1/2 cup water

Instructions

  1. Prepare the salad: Combine cooked rice, sesame oil, chilli oil, soy sauce, chicken, edamame, scallions, cucumber, sesame seeds, Thai basil, mint, cilantro, peanuts, and red chilli in a large bowl.
  2. Make the peanut satay dressing: In a separate bowl, whisk together peanut butter, soy sauce, sesame oil, fish sauce, sweet chilli jam, and water until smooth.
  3. Assemble: Pour the peanut satay dressing over the salad and toss to combine. Serve chilled.

Notes

  • If you prefer a vegetarian version, you can omit the chicken and add more vegetables or tofu.
  • You can adjust the spice level by adding more or less red chilli to the salad.
