Main Ingredients:
- 1 pound ground Italian sausage, chicken or pork
- 2 tablespoon salted butter
- 1½ cups heavy cream
Veggies:
- 1 large onion, diced
- 3 ribs celery, chopped
- 3 carrots, sliced
- 3 cloves garlic, minced
- 3 Roma tomatoes, chopped
- 2 cups baby spinach
Seasonings:
- ½ cup dry white wine (optional)
- 4–5 cups low-sodium chicken broth
- 1 teaspoon each dried basil, thyme, salt
- 1 teaspoon black pepper
- ¼ teaspoon dried fennel
Others:
- 1 pound potato gnocchi
Instructions
- Cook Italian Sausage: Brown sausage in a pot, drain excess grease.
- Sauté Veggies: Cook onion, celery, carrots until softened.
- Season and Add Tomatoes: Stir in garlic, seasonings, and tomatoes.
- Deglaze and Simmer: Add wine, broth, simmer for 20 mins.
- Cook Gnocchi: Add gnocchi, cream, cook until tender.
- Add Spinach and Serve: Stir in spinach, serve hot.
