Description

A hearty and flavorful one-pot meal featuring Beyond Sausage, lentils, and chickpeas cooked with a blend of vegetables and Cajun seasoning.

Main Ingredients:

  • 2 tbsp vegetable oil
  • 1 pack Beyond Sausage
  • 1 onion, diced
  • 1 carrot, diced
  • 2 sticks celery, chopped
  • 1 red pepper, sliced
  • 2 garlic cloves, chopped
  • 1 x 400g can green lentils in water, drained and rinsed
  • 1 x 215g can chickpeas in water, drained and rinsed
  • 150ml vegetable stock
  • 1 x 227g can chopped tomatoes
  • 3 tsp Cajun seasoning

Instructions

  1. Prep Ingredients: Heat vegetable oil in a pot. Add Beyond Sausage, onion, carrot, celery, red pepper, and garlic. Cook until vegetables soften.
  2. Add Remaining Ingredients: Stir in lentils, chickpeas, vegetable stock, chopped tomatoes, and Cajun seasoning. Bring to a simmer.
  3. Simmer: Cover and let the mixture simmer for about 20 minutes, stirring occasionally.
  4. Serve: Once the flavors have melded, serve hot and enjoy!

  • You can adjust the Cajun seasoning to suit your taste preferences.
