Main Ingredients:
- 2 tbsp vegetable oil
- 1 pack Beyond Sausage
- 1 onion, diced
- 1 carrot, diced
- 2 sticks celery, chopped
- 1 red pepper, sliced
- 2 garlic cloves, chopped
- 1 x 400g can green lentils in water, drained and rinsed
- 1 x 215g can chickpeas in water, drained and rinsed
- 150ml vegetable stock
- 1 x 227g can chopped tomatoes
- 3 tsp Cajun seasoning
Instructions
- Prep Ingredients: Heat vegetable oil in a pot. Add Beyond Sausage, onion, carrot, celery, red pepper, and garlic. Cook until vegetables soften.
- Add Remaining Ingredients: Stir in lentils, chickpeas, vegetable stock, chopped tomatoes, and Cajun seasoning. Bring to a simmer.
- Simmer: Cover and let the mixture simmer for about 20 minutes, stirring occasionally.
- Serve: Once the flavors have melded, serve hot and enjoy!
