Vegetables:
- 4 large bell peppers, thinly sliced
- 1 large yellow onion, thinly sliced
- 1–2 tbsp olive oil
- Salt, pepper, garlic powder, paprika (to taste)
Chicken:
- 2 lbs chicken breast, sliced
- 2 tbsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- 1 tsp salt
- 1/4 tsp pepper
- 1 tbsp olive oil
Toppings:
- Cheese, sour cream, lime juice, cilantro, lettuce, tortillas, avocado or guacamole
Instructions
- Preheat Oven: Preheat oven to 375℉ and line two baking sheets with parchment paper.
- Prepare Veggies: Toss sliced peppers and onions with oil and seasonings, roast for 12 minutes.
- Season Chicken: Mix spices, coat chicken, and place on second baking sheet.
- Cook Chicken and Veggies: Roast both for 8-15 minutes until done.
- Serve: Rest chicken, slice thinly, and serve with roasted veggies and toppings.
