Vegetables:

  • 4 large bell peppers, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 12 tbsp olive oil
  • Salt, pepper, garlic powder, paprika (to taste)

Chicken:

  • 2 lbs chicken breast, sliced
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp olive oil

Toppings:

  • Cheese, sour cream, lime juice, cilantro, lettuce, tortillas, avocado or guacamole

Instructions

  1. Preheat Oven: Preheat oven to 375℉ and line two baking sheets with parchment paper.
  2. Prepare Veggies: Toss sliced peppers and onions with oil and seasonings, roast for 12 minutes.
  3. Season Chicken: Mix spices, coat chicken, and place on second baking sheet.
  4. Cook Chicken and Veggies: Roast both for 8-15 minutes until done.
  5. Serve: Rest chicken, slice thinly, and serve with roasted veggies and toppings.
