- 4 chicken breasts, about 2 pounds
- salt and pepper
- 2 eggs
- 1/4 cup milk
- 1 cup panko breadcrumbs
- 1 cup parmesan cheese, grated
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 pound baby potatoes, halved
- 1 bunch asparagus
- 2 tablespoons olive oil
Instructions
- Preheat the oven: Preheat the oven to 425 degrees Fahrenheit. Prepare a sheet pan with cooking spray or parchment paper.
- Prepare chicken: Season chicken with salt and pepper. Dredge in egg mixture, then coat in panko mixture. Place on sheet pan.
- Prepare vegetables: Toss asparagus and potatoes with olive oil, salt, and pepper. Arrange on the sheet pan.
- Bake: Bake for 15 minutes, flip chicken, add asparagus, then bake for an additional 12-15 minutes or until chicken is cooked through.
