Description

These Shredded Beef Taquitos are easy to make, healthier as they are baked instead of fried, and packed with delicious Mexican flavors. Perfect for a quick appetizer or a fun meal!

Shredded Beef Filling:

  • 1 tablespoon olive oil
  • ½ cup onion, minced
  • 2 cups Mexican Shredded Beef, drained
  • 4 ounce canned green chiles, un-drained
  • 2 cups finely shredded cheese
  • ¼ teaspoon salt, or to taste

Shredded Beef Taquitos:

  • Oil cooking spray (or oil for brushing on)
  • 20 corn tortillas

Instructions

  1. Prepare the Shredded Beef Filling: In a skillet, sauté the minced onion in olive oil until soft. Add in the shredded beef, green chiles, cheese, and salt. Mix well and set aside.
  2. Assemble the Taquitos: Preheat the oven and line a baking sheet with parchment paper. Fill each corn tortilla with a spoonful of the beef filling, roll tightly, and place seam side down on the baking sheet. Spray or brush with oil.
  3. Bake: Bake the taquitos until crispy and golden brown.
  4. Serve: Serve hot with your favorite toppings and enjoy!
