Shredded Beef Filling:
- 1 tablespoon olive oil
- ½ cup onion, minced
- 2 cups Mexican Shredded Beef, drained
- 4 ounce canned green chiles, un-drained
- 2 cups finely shredded cheese
- ¼ teaspoon salt, or to taste
Shredded Beef Taquitos:
- Oil cooking spray (or oil for brushing on)
- 20 corn tortillas
Instructions
- Prepare the Shredded Beef Filling: In a skillet, sauté the minced onion in olive oil until soft. Add in the shredded beef, green chiles, cheese, and salt. Mix well and set aside.
- Assemble the Taquitos: Preheat the oven and line a baking sheet with parchment paper. Fill each corn tortilla with a spoonful of the beef filling, roll tightly, and place seam side down on the baking sheet. Spray or brush with oil.
- Bake: Bake the taquitos until crispy and golden brown.
- Serve: Serve hot with your favorite toppings and enjoy!
