  • 12 oz mushrooms
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 2 large shallots
  • 1/2 cup dry white wine
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 sprigs fresh thyme
  • 1 tsp Dijon mustard
  • 2 tsp cornstarch

Instructions

  1. Prepare Chicken: Cut chicken breasts into cutlets and coat with flour mixture.
  2. Cook Chicken: Brown chicken in skillet, then set aside.
  3. Sauté Mushrooms: Cook mushrooms until dark, then add shallots and garlic.
  4. Make Sauce: Deglaze pan with wine, add broth, cream, thyme, and mustard. Thicken with cornstarch.
