Description

This Slow-Braised Beef Roast with Cranberry Balsamic Glaze recipe combines tender beef chuck roast with a sweet and tangy cranberry balsamic glaze, creating a flavorful and comforting dish perfect for a special dinner.

Ingredients

Scale

Main Ingredients:

  • 3 to 4 pounds beef chuck roast
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 ½ cups whole cranberries (fresh or frozen)
  • 4 to 5 sprigs fresh thyme
  • 4 carrots, peeled and halved (optional)

Instructions

  1. Season the Beef: Rub the beef chuck roast with salt and black pepper.
  2. Sear the Beef: In a large Dutch oven, heat olive oil over medium-high heat and brown the beef on all sides. Remove and set aside.
  3. Cook Aromatics: In the same pot, sauté onions and garlic until softened.
  4. Make the Glaze: Add beef broth, balsamic vinegar, brown sugar, cranberries, and thyme. Bring to a simmer.
  5. Braise the Beef: Return the beef to the pot, cover, and cook in the oven at a low temperature until tender.
  6. Add Carrots: If desired, add carrots during the last hour of cooking.
  7. Finish and Serve: Remove the beef, slice, and serve with the cranberry balsamic glaze.

Notes

  • For a thicker glaze, you can strain and reduce the cooking liquid after braising.
  • This dish pairs well with mashed potatoes or roasted vegetables.
