Description

This Slow Cooker Vegetable Beef Soup is a hearty and comforting dish filled with ground chuck, mixed vegetables, and flavorful seasonings, all simmered to perfection in a slow cooker.

Main Ingredients:

  • 1 ½2 pounds ground chuck
  • 1 tablespoon Southern Soul House Seasoning
  • 1 teaspoon salt
  • 1 medium chopped onion
  • 2 medium peeled and diced potatoes

Additional Ingredients:

  • 2 10 ounce packages of frozen vegetables (mixed)
  • 1 28 ounce can crushed tomatoes
  • 1 10 ounce can Rotel tomatoes with green chilies
  • 1 32 ounce box of beef broth
  • 1 cup water

Instructions

  1. Brown the Ground Chuck: Brown the ground chuck in a skillet and season with Southern Soul House Seasoning.
  2. Add Ingredients to Slow Cooker: Transfer the browned meat to the slow cooker and add in the remaining ingredients.
  3. Cook in Slow Cooker: Set the slow cooker to low and cook for 6-8 hours, or on high for 5-6 hours.
  4. Adjust Seasoning and Serve: Taste the soup, adjust seasoning if needed, and serve hot with optional parsley garnish.
