Description

These S’mores Cookie Bars are a delicious twist on the classic campfire treat. With a buttery graham cracker crust, gooey marshmallow creme, and melty chocolate chips, these bars are the perfect indulgent dessert for any occasion.


Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour (spooned & leveled)
  • 1 cup graham cracker crumbs (about 8 full-sheet graham crackers)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 heaping cup marshmallow creme

Instructions

  1. Preheat oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream the butter and brown sugar together until smooth. Add the egg and vanilla extract, mix well.
  3. Slowly mix in the flour, graham cracker crumbs, baking powder, and salt until combined. Fold in the chocolate chips.
  4. Spread half of the cookie dough into the prepared pan. Spread marshmallow creme on top. Drop spoonfuls of the remaining cookie dough on top of the marshmallow creme.
  5. Bake for 25-30 minutes or until lightly browned. Allow to cool completely before cutting into bars.

Notes

  • You can toast the marshmallow creme with a kitchen torch for an authentic s’mores flavor.
  • Feel free to add chopped nuts or extra chocolate chips for more texture and flavor.
