Description
These S’mores Cookie Bars are a delicious twist on the classic campfire treat. With a buttery graham cracker crust, gooey marshmallow creme, and melty chocolate chips, these bars are the perfect indulgent dessert for any occasion.

- 1/2 cup unsalted butter, softened to room temperature
- 3/4 cup packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour (spooned & leveled)
- 1 cup graham cracker crumbs (about 8 full-sheet graham crackers)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 heaping cup marshmallow creme
Instructions
- Preheat oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, cream the butter and brown sugar together until smooth. Add the egg and vanilla extract, mix well.
- Slowly mix in the flour, graham cracker crumbs, baking powder, and salt until combined. Fold in the chocolate chips.
- Spread half of the cookie dough into the prepared pan. Spread marshmallow creme on top. Drop spoonfuls of the remaining cookie dough on top of the marshmallow creme.
- Bake for 25-30 minutes or until lightly browned. Allow to cool completely before cutting into bars.
Notes
- You can toast the marshmallow creme with a kitchen torch for an authentic s’mores flavor.
- Feel free to add chopped nuts or extra chocolate chips for more texture and flavor.
