Cinnamon Sugar Filling:

Cookies:
- 1 cup unsalted butter, softened but cool
- 1 1/3 cups granulated sugar
- 1 3/4 teaspoons pure vanilla extract

- 1 large egg yolk
- 2 3/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1 teaspoon cornstarch
- 1/4 teaspoon salt
Instructions
- Prepare the Cinnamon Sugar Filling: Mix together the butter, brown sugar, flour, cinnamon, and salt until well combined.
- Make the Cookie Dough: Cream the butter and sugar, then add in the vanilla, egg, and egg yolk. Mix in the flour, baking powder, cornstarch, and salt until a dough forms.
- Assemble the Cookies: Roll out the dough, spread the cinnamon sugar filling, roll up, slice, and bake until golden.
Notes
- For an extra cinnamon kick, add a sprinkle of cinnamon sugar on top before baking.
