Main Cookie Dough:
- 12 tbsp unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 tbsp. lemon zest
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 2 tsp. lemon extract (or 1 tsp. each lemon and vanilla extract)
- 3 cups all-purpose flour, spooned and leveled
- 1 tsp. baking soda
- 1 tsp. cornstarch
- 3/4 tsp. salt
- 2 tbsp. lemon juice
- ¼ cup granulated sugar, for rolling & garnishing
Instructions
- Preheat Oven: Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
- Cream Butter and Sugar: In a large mixing bowl, cream together the butter, sugar, and lemon zest until light and fluffy.
- Add Wet Ingredients: Mix in the egg, egg yolk, lemon extract, and lemon juice until well combined.
- Add Dry Ingredients: Sift in the flour, baking soda, cornstarch, and salt. Mix until just combined.
- Chill Dough: Cover the dough and chill in the refrigerator for at least 30 minutes.
- Shape Cookies: Roll the dough into balls, then roll in granulated sugar. Place on prepared baking sheets.
- Bake: Bake for 10-12 minutes or until the edges are set and the tops are slightly golden.
- Cool: Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can add a lemon glaze on top for extra lemon flavor.
- Store the cookies in an airtight container to keep them soft and chewy.
