Description

These soft and chewy lemon cookies are bursting with citrus flavor and are perfect for any occasion. They are easy to make and will surely become a favorite treat for lemon lovers.

Main Cookie Dough:

  • 12 tbsp unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 tbsp. lemon zest
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 tsp. lemon extract (or 1 tsp. each lemon and vanilla extract)
  • 3 cups all-purpose flour, spooned and leveled
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • 3/4 tsp. salt
  • 2 tbsp. lemon juice
  • ¼ cup granulated sugar, for rolling & garnishing

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the butter, sugar, and lemon zest until light and fluffy.
  3. Add Wet Ingredients: Mix in the egg, egg yolk, lemon extract, and lemon juice until well combined.
  4. Add Dry Ingredients: Sift in the flour, baking soda, cornstarch, and salt. Mix until just combined.
  5. Chill Dough: Cover the dough and chill in the refrigerator for at least 30 minutes.
  6. Shape Cookies: Roll the dough into balls, then roll in granulated sugar. Place on prepared baking sheets.
  7. Bake: Bake for 10-12 minutes or until the edges are set and the tops are slightly golden.
  8. Cool: Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can add a lemon glaze on top for extra lemon flavor.
  • Store the cookies in an airtight container to keep them soft and chewy.
