- 200g Skyr (Icelandic yoghurt)
- 2 Eggs
- 20g Cornstarch (2 tbsp)
- 3 tbsp Erythritol (or preferred sweetener)
- Chopped Apples (1–2 small apples)
- Cinnamon (to taste)
Instructions
- Preheat the oven: Preheat the oven to 350°F (180°C) and grease a cake tin.
- Mix wet ingredients: In a bowl, mix Skyr, eggs, and sweetener until well combined.
- Add dry ingredients: Fold in cornstarch and cinnamon until just combined.
- Add apples: Gently fold in chopped apples.
- Bake: Pour the batter into the cake tin and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Cool and serve: Let the cake cool before slicing and serving.
Notes
- You can sprinkle some additional cinnamon on top before baking for extra flavor.
- This cake is best served warm with a dollop of whipped cream or a scoop of vanilla ice cream.
