Description

This Spiced Apple Yoghurt Cake is a delicious and moist dessert with a hint of cinnamon and chunks of fresh apples scattered throughout. It’s the perfect treat for any occasion!

  • 200g Skyr (Icelandic yoghurt)
  • 2 Eggs
  • 20g Cornstarch (2 tbsp)
  • 3 tbsp Erythritol (or preferred sweetener)
  • Chopped Apples (1–2 small apples)
  • Cinnamon (to taste)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C) and grease a cake tin.
  2. Mix wet ingredients: In a bowl, mix Skyr, eggs, and sweetener until well combined.
  3. Add dry ingredients: Fold in cornstarch and cinnamon until just combined.
  4. Add apples: Gently fold in chopped apples.
  5. Bake: Pour the batter into the cake tin and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Cool and serve: Let the cake cool before slicing and serving.

Notes

  • You can sprinkle some additional cinnamon on top before baking for extra flavor.
