    • 1/4 cup water
    • 1/4 tsp cayenne pepper
    • 1/2 tsp garlic powder
    • 1/4 cup gluten-free flour blend
    • 1 cup cooked and cooled quinoa

  • Avocado crema, creamy jalapeño sauce, or guacamole

Instructions

  1. Prepare Quinoa: Cook 1/3 cup dry quinoa according to package instructions.
  2. Roast Vegetables: Preheat oven, toss black beans, mushrooms, and onion with oil and salt, roast until tender.
  3. Make Flax Egg: Combine flaxseed meal with water to form a flax egg.
  4. Mix Ingredients: Add roasted vegetables to flax egg, season, add flour and quinoa, mix to form batter.
  5. Form Patties: Portion mixture into 8 patties.
