  • 14 oz chicken tenders, cut into bite-sized pieces (about 1-inch)
  • 1 tbsp olive oil, divided
  • 1 tsp salt, divided
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/8 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 14 oz Mexican chorizo
  • 3 large garlic cloves
  • 1/2 cup diced onion
  • 1/2 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 lb shellbow pasta
  • 1/2 cup parmesan cheese
  • 1 tbsp lemon juice
  • 1/2 cup pasta water or more

Instructions

  1. Prepare the Chicken: In a bowl, mix chicken tenders with 1/2 tbsp olive oil, 1/2 tsp salt, smoked paprika, garlic powder, black pepper, onion powder, and oregano. Cook in a skillet until browned.
  2. Cook Chorizo Mixture: In the same skillet, cook Mexican chorizo, garlic, and onion until chorizo is browned. Deglaze with white wine.
  3. Add Creamy Sauce: Stir in chicken broth, heavy cream, and remaining salt. Simmer until slightly thickened.
  4. Combine and Serve: Add cooked pasta, parmesan, lemon juice, and pasta water to the sauce. Toss to combine and serve hot.

Notes

  • You can adjust the level of spiciness by using mild or hot chorizo.
