Description

These SPICY SHRIMP SUSHI STACKS are a flavorful twist on traditional sushi. Layers of sushi rice, spicy shrimp, avocado, and cucumber are stacked high for a visually stunning dish that is as delicious as it is impressive.

Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons sriracha sauce
  • 1/2 cup mayonnaise

Other Ingredients:

  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1 tablespoon rice vinegar (for rice)
  • 1/2 teaspoon salt
  • 1 avocado, sliced
  • 1 small cucumber, julienned
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

  1. Marinate Shrimp: In a bowl, mix shrimp with olive oil, soy sauce, rice vinegar, sugar, sesame oil, sriracha sauce, and mayonnaise. Let marinate for at least 30 minutes.
  2. Cook Rice: Rinse sushi rice until the water runs clear. Cook rice in water according to package instructions. Stir in rice vinegar and salt once cooked.
  3. Assemble Stacks: In a mold, layer rice, shrimp mixture, avocado, and cucumber. Repeat for desired number of stacks.
  4. Garnish and Serve: Top with sesame seeds, cilantro, or green onions. Carefully remove the mold and serve the stacks immediately.

Notes

  • You can customize the spice level by adjusting the amount of sriracha sauce in the shrimp marinade.
  • For a vegetarian version, substitute the shrimp with marinated tofu or grilled vegetables.
