Description

This Spicy Tuna Salad Sandwich recipe combines flavorful tuna mousse with creamy avocado, zesty pesto, and fresh tomato slices, all sandwiched between two slices of whole wheat bread.

Tuna “Mousse”

  • 1 can flaked or chunk tuna packed in water, drained (about 5 oz)
  • 2 Tbsp red onion, finely diced
  • 2 tsp drained capers
  • 1 Tbsp fresh dill, finely chopped
  • 1 Tbsp Dijon mustard
  • 34 Tbsp plain Greek yogurt
  • 1 Tbsp lemon juice
  • Salt and pepper, to taste

To Assemble

  • 2 slices whole wheat bread, toasted
  • 1/4 avocado, mashed
  • 12 Tbsp pesto (approximately 1 Tbsp used for nutrition)
  • 12 slices tomato
  • Salt and pepper, to taste

Instructions

  1. Prepare Tuna “Mousse”: In a bowl, mix together drained tuna, red onion, capers, dill, mustard, Greek yogurt, lemon juice, salt, and pepper until well combined.
  2. Assemble Sandwich: Spread mashed avocado on one slice of toasted bread. Top with a layer of tuna mousse, pesto, tomato slices, salt, and pepper. Cover with the second slice of toasted bread.

Notes

  • You can customize this sandwich by adding lettuce, sprouts, or cheese for extra flavor and texture.
