  • 2 Tbsp extra virgin olive oil, divided

For the Toppings:

  • 4 oz provolone cheese (about 1 cup, deli slices chopped)
  • 2 oz shredded mozzarella cheese (1/2 cup)
  • 2 oz finely shredded parmesan cheese (slightly packed 1/2 cup)
  • 68 canned artichoke hearts, drained well and quartered
  • Red pepper flakes, for serving (optional)

Instructions

  1. Prepare the Dough: Roll out the pizza dough on a baking sheet or pizza stone.
  2. Make the Spinach Béchamel Sauce: Sauté spinach, make a roux with butter and flour, add milk and seasonings, then stir in spinach.
  3. Assemble the Pizza: Spread the sauce on the dough, top with cheeses and artichoke hearts.
  4. Bake: Bake in a preheated oven until crust is golden and cheese is melted.
  5. Serve: Sprinkle with red pepper flakes before serving.
