  • 34 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup grated Parmesan cheese (plus extra for topping)
  • 1/2 cup reserved pasta water (as needed)

Instructions

  1. Cook Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Sauté Mushrooms: In a large skillet, heat olive oil or butter over medium heat. Add mushrooms and cook until they release their juices and brown slightly.
  3. Add Spinach: Add garlic and spinach to the skillet, and sauté until spinach wilts.
  4. Combine Ingredients: Stir in salt, pepper, cream, Parmesan cheese, and reserved pasta water. Cook until the sauce thickens slightly.
  5. Finish Dish: Add the cooked pasta to the skillet and toss everything together until well combined. Serve topped with extra Parmesan cheese.
