Description
Warm and hearty Split Pea Soup made with tender split peas, vegetables, and flavorful ham. This comforting soup is perfect for a cozy meal on a chilly day.

- 1 Tbsp olive oil
- 1 1/2 cups chopped yellow onion
- 1 1/4 cups chopped celery
- 1 tsp minced garlic
- 4 cups unsalted chicken broth
- 4 cups water
- 1 (16 oz) bag dried split peas, picked over and rinsed
- 2 bay leaves
- 1 1/2 tsp chopped fresh thyme, or 1/2 tsp dried
- Salt and freshly ground black pepper
- 1 1/2 lb meaty ham bone or ham shanks
- 1 cup chopped carrots
- Chopped fresh parsley, for garnish (optional)
Instructions
- Heat olive oil: In a large pot, heat olive oil over medium heat.
- Sauté vegetables: Add onions, celery, and garlic. Cook until softened, about 5 minutes.
- Add broth and water: Pour in chicken broth and water. Stir in split peas, bay leaves, thyme, salt, and pepper.
- Simmer: Add ham bone or shanks. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add carrots: Stir in chopped carrots and continue to simmer for another 30 minutes.
- Remove ham bone: Remove ham bone, shred meat, and return to the soup.
- Season and serve: Adjust seasoning with salt and pepper. Serve hot, garnished with parsley if desired.
Notes
- This soup can be made ahead of time and reheated before serving.
- For a vegetarian version, omit the ham bone and use vegetable broth instead of chicken broth.
