Description

Warm and hearty Split Pea Soup made with tender split peas, vegetables, and flavorful ham. This comforting soup is perfect for a cozy meal on a chilly day.


Ingredients

  • 1 Tbsp olive oil
  • 1 1/2 cups chopped yellow onion
  • 1 1/4 cups chopped celery
  • 1 tsp minced garlic
  • 4 cups unsalted chicken broth
  • 4 cups water
  • 1 (16 oz) bag dried split peas, picked over and rinsed
  • 2 bay leaves
  • 1 1/2 tsp chopped fresh thyme, or 1/2 tsp dried
  • Salt and freshly ground black pepper
  • 1 1/2 lb meaty ham bone or ham shanks
  • 1 cup chopped carrots
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil: In a large pot, heat olive oil over medium heat.
  2. Sauté vegetables: Add onions, celery, and garlic. Cook until softened, about 5 minutes.
  3. Add broth and water: Pour in chicken broth and water. Stir in split peas, bay leaves, thyme, salt, and pepper.
  4. Simmer: Add ham bone or shanks. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Add carrots: Stir in chopped carrots and continue to simmer for another 30 minutes.
  6. Remove ham bone: Remove ham bone, shred meat, and return to the soup.
  7. Season and serve: Adjust seasoning with salt and pepper. Serve hot, garnished with parsley if desired.

Notes

  • This soup can be made ahead of time and reheated before serving.
  • For a vegetarian version, omit the ham bone and use vegetable broth instead of chicken broth.
