Ingredients

Units Scale

Main Ingredients:

  • 1 Tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 tsp Fresh ginger, minced
  • 1 lb Ground beef (or chicken/turkey)
  • 0.5 Onion, finely chopped
  • 1 Tbsp Soy sauce
  • 1 Tbsp Oyster sauce (optional)
  • 1 tsp Sesame oil
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Red pepper flakes (optional)
  • Bok choy (1 bunch, stems and leaves separated)
  • 0.25 cup Water or chicken broth

Instructions

  1. Step 1: Prep & Warm Your Pan – Slice bok choy stems and separate leaves. Heat a wok or large skillet over medium-high heat and add olive oil.
  2. Step 2: Sauté Aromatics – Add minced garlic and ginger to the hot oil. Stir for about 30 seconds until fragrant.
  3. Step 3: Brown the Ground Meat – Add ground meat and chopped onion. Cook until the meat loses its pink color and begins browning. Stir in soy sauce, oyster sauce, sesame oil, salt, pepper, and red pepper flakes.
  4. Step 4: Add Bok Choy Stems & Liquid – Stir in bok choy stems and pour in ¼ cup of water or broth. Cover briefly to soften stems.
  5. Step 5: Add Leaves & Finish – Add bok choy leaves, tossing quickly until wilted. Adjust seasoning to taste.
  6. Step 6: Serve Immediately – Transfer to a serving plate and enjoy!

Notes

  • Cook stems first as they take longer than leaves.
  • For a lighter flavor, use ground chicken or turkey.
  • Add a splash of rice vinegar or lime juice for brightness.
  • Serve with rice or noodles for a complete meal.
  • Store leftovers in an airtight container for up to 3 days.
