Fillings:

  • 1 cup Cooked ground turkey, seasoned with salt, pepper, and garlic powder
  • 3 Eggs, scrambled
  • 1 cup Sautéed spinach and mushrooms with olive oil and garlic
  • 0.5 cup Shredded cheddar cheese
  • 0.25 cup Sour cream (optional, for topping)
  • 2 tablespoons Chopped chives (for garnish)

Instructions

  1. Prepare Potato Nests: Boil and mash the potatoes, then mix with egg, cheese, salt, pepper, and flour. Form into nests in a muffin tin and bake until golden.
  2. Prepare Fillings: Cook ground turkey, scramble eggs, sauté spinach and mushrooms. Fill the potato nests with the fillings and top with cheese.
