Main Casserole:

  • 3 Medium Sweet Potatoes
  • 1 Large Egg
  • 1/4 Cup Butter, melted
  • 1 Pinch Salt
  • 1/4 Cup Granulated Sugar
  • 1/3 Cup Brown Sugar
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Vanilla
  • 2 Tablespoons Milk or Heavy Cream

Topping:

  • 2 Cups Mini Marshmallows
  • 1/3 Cup Butter, cold and cut in cubes
  • 1/2 Cup All-Purpose Flour
  • 3/4 Cup Brown Sugar
  • 1/2 teaspoon Cinnamon
  • 1/2 Cup Panko Bread Crumbs
  • 1/4 Cup Graham Cracker Crumbs

Instructions

  1. Preheat: Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Cook Sweet Potatoes: Peel and cube sweet potatoes, then boil until tender. Mash and mix with egg, butter, sugars, cinnamon, vanilla, and milk. Spread in the baking dish.
  3. Make Topping: Combine marshmallows, butter, flour, brown sugar, cinnamon, and crumbs. Sprinkle on top of the sweet potato mixture.
  4. Bake: Bake for 25-30 minutes until the topping is golden brown and bubbly.
