Description

These Sweet & Spicy Korean BBQ Meatballs are a flavorful twist on a classic dish. The tender meatballs are coated in a sticky Korean BBQ sauce that balances sweetness and heat perfectly.


Ingredients

Meatballs:

  • 1 lb ground beef
  • 1/2 cup minced green onions
  • 4 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tbsp tamari sauce
  • 12 tsp gochujang
  • 2 tbsp cornstarch
  • 1 tsp ground black pepper

Korean BBQ Sauce:

  • 1 tbsp sesame oil
  • 4 garlic cloves
  • 1/3 cup tamari sauce
  • 1 cup water
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 2 tsp cornstarch
  • 1 tbsp water
  • Green onions and toasted sesame seeds, for garnish

Instructions

  1. Prepare Meatballs: Combine all meatball ingredients in a bowl and mix. Shape into meatballs and chill.
  2. Cook Meatballs: Sear meatballs in sesame oil, then add garlic, tamari sauce, water, brown sugar, and rice vinegar. Simmer covered for 10 minutes.
  3. Thicken Sauce: Combine cornstarch and water, add to the skillet, and simmer until thickened.
  4. Serve: Adjust seasoning, remove from heat, and serve over rice garnished with green onions and sesame seeds.

Notes

  • Adjust sweetness, thickness, and spiciness of the sauce to taste.
  • Leftovers can be stored in the fridge or frozen for future meals.
