These Sweet & Spicy Korean BBQ Meatballs are a flavorful twist on a classic dish. The tender meatballs are coated in a sticky Korean BBQ sauce that balances sweetness and heat perfectly.

Meatballs:
- 1 lb ground beef
- 1/2 cup minced green onions
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 2 tbsp tamari sauce
- 1–2 tsp gochujang
- 2 tbsp cornstarch
- 1 tsp ground black pepper
Korean BBQ Sauce:
- 1 tbsp sesame oil
- 4 garlic cloves
- 1/3 cup tamari sauce
- 1 cup water
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 2 tsp cornstarch
- 1 tbsp water
- Green onions and toasted sesame seeds, for garnish
Instructions
- Prepare Meatballs: Combine all meatball ingredients in a bowl and mix. Shape into meatballs and chill.
- Cook Meatballs: Sear meatballs in sesame oil, then add garlic, tamari sauce, water, brown sugar, and rice vinegar. Simmer covered for 10 minutes.
- Thicken Sauce: Combine cornstarch and water, add to the skillet, and simmer until thickened.
- Serve: Adjust seasoning, remove from heat, and serve over rice garnished with green onions and sesame seeds.
Notes
- Adjust sweetness, thickness, and spiciness of the sauce to taste.
- Leftovers can be stored in the fridge or frozen for future meals.
