For the crust:
- ¾ cup (105g) all-purpose flour
- ¼ cup (55g) packed light brown sugar
- ¼ teaspoon salt
- ¼ cup (56g) unsalted butter, melted
For the filling:
- 1 block (250g) cream cheese, softened
- ⅓ cup (65g) granulated sugar
- 2 teaspoon lemon zest
- 1 large egg
- ¼ cup (60ml) plain full fat yogurt
- 1 teaspoon (5ml) pure vanilla extract
For the lemon curd swirl:
- 1 batch of Small Batch Lemon Curd
Instructions
- Prepare the crust: Mix flour, brown sugar, and salt. Add melted butter, press into a pan, and bake.
- Make the filling: Beat cream cheese, sugar, lemon zest, egg, yogurt, and vanilla until smooth. Pour over crust.
- Create lemon curd swirl: Drop spoonfuls of lemon curd onto the filling and swirl with a knife.
- Bake: Bake until set, cool, and refrigerate before cutting into bars.
Notes
- You can use store-bought lemon curd or make your own for the swirl.
- Adjust the sweetness by adding more or less sugar to the filling.
