- 1 pound ground beef pork, chicken, or turkey
- 1 tablespoon olive or canola oil (if using a lean protein)
- 1 pound pre-made gnocchi
- 1 10 ounce can Rotel
- 1 packet taco seasoning
- 1 medium white or yellow onion finely diced
- 1 green bell pepper finely diced
- 1 15.5 ounce can sweet corn
- 4 tablespoons chipotle en adobo pepper sauce (optional, adds heat and smokiness)
- 1 cup Oaxaca or Monterey jack cheese shredded
- Crushed tortillas chips or tortilla strips
Instructions
- Brown the meat: In a large skillet, cook the ground meat over medium-high heat until browned.
- Add vegetables and seasoning: Add the diced onion, bell pepper, taco seasoning, and Rotel to the skillet. Cook until vegetables are softened.
- Cook gnocchi: Add the pre-made gnocchi, sweet corn, and chipotle en adobo sauce to the skillet. Stir to combine and cook until gnocchi is heated through.
- Finish with cheese: Sprinkle shredded cheese over the top and allow it to melt. Serve with crushed tortilla chips or strips on top.
Notes
- You can customize this dish by adding your favorite taco toppings like sour cream, avocado, or cilantro.
- If you prefer a spicier dish, increase the amount of chipotle en adobo sauce or add some chopped jalapenos.
