Description

This Taco Gnocchi Skillet combines the flavors of tacos with the comfort of gnocchi in a delicious one-pan meal. It’s a hearty and flavorful dish that the whole family will love.


Ingredients

  • 1 pound ground beef pork, chicken, or turkey
  • 1 tablespoon olive or canola oil (if using a lean protein)
  • 1 pound pre-made gnocchi
  • 1 10 ounce can Rotel
  • 1 packet taco seasoning
  • 1 medium white or yellow onion finely diced
  • 1 green bell pepper finely diced
  • 1 15.5 ounce can sweet corn
  • 4 tablespoons chipotle en adobo pepper sauce (optional, adds heat and smokiness)
  • 1 cup Oaxaca or Monterey jack cheese shredded
  • Crushed tortillas chips or tortilla strips

Instructions

  1. Brown the meat: In a large skillet, cook the ground meat over medium-high heat until browned.
  2. Add vegetables and seasoning: Add the diced onion, bell pepper, taco seasoning, and Rotel to the skillet. Cook until vegetables are softened.
  3. Cook gnocchi: Add the pre-made gnocchi, sweet corn, and chipotle en adobo sauce to the skillet. Stir to combine and cook until gnocchi is heated through.
  4. Finish with cheese: Sprinkle shredded cheese over the top and allow it to melt. Serve with crushed tortilla chips or strips on top.

Notes

  • You can customize this dish by adding your favorite taco toppings like sour cream, avocado, or cilantro.
