Description

This hearty Texas Cowboy Stew is perfect for a festive Christmas dinner. Packed with ground beef, kielbasa sausage, vegetables, and flavorful spices, it’s a comforting and delicious meal for the holiday season.

Main Ingredients:

    • 2 lb ground beef
    • 2 packages kielbasa sausage, sliced into ½ inch pieces
    • 2 garlic cloves, minced
    • 1 onion, chopped
    • 4 medium baking potatoes, peeled and diced

Canned Ingredients:

    • 2 (14.5oz) cans peeled and diced tomatoes, drained
    • 2 (15oz) cans pinto beans, with liquid
    • 1 (15.2oz) can whole kernel corn, drained
    • 2 (14.5oz) cans diced tomatoes with green chile pepper, with liquid

Additional Ingredients:

  • 1 (10oz) package frozen mixed vegetables
  • 4 cups water
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Brown the Meat: In a large pot, brown the ground beef and kielbasa sausage until cooked through.
  2. Add Ingredients: Add garlic, onion, tomatoes, potatoes, beans, corn, diced tomatoes with green chile pepper, mixed vegetables, water, cumin, chili powder, salt, and pepper to the pot.
  3. Simmer: Bring the stew to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
