- 1/2 tsp cooking salt / kosher salt
Wet ingredients:
- 1 tightly packed cup (200g) brown sugar
- 1/2 cup (100g) caster sugar / superfine sugar
- 1 large egg
- 1 yolk from a large egg
- 1 tsp vanilla extract
Choc chips:
- 1 1/2 cups (250g) dark chocolate chips / semi-sweet choc chips
- 3/4 cup (150g) milk chocolate chips
Instructions
- Preheat Oven: Preheat the oven to 180°C (160°C fan).
- Mix Dry Ingredients: In a bowl, mix together the flour, cornflour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a separate bowl, cream together the butter, brown sugar, and caster sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the egg, egg yolk, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet mixture until a dough forms. Fold in the chocolate chips.
- Bake Cookies: Scoop tablespoon-sized portions of dough onto a lined baking tray, leaving space between each. Bake for 10-12 minutes until golden.
- Cool and Enjoy: Allow the cookies to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra gooey cookies, slightly underbake them and let them finish cooking on the tray out of the oven.
