  • 1/2 teaspoon ground ginger

  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins
  • 2 cups chicken broth
  • 1/4 cup almonds, toasted
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon honey (optional)

Instructions

  1. Prep the Chicken: Season the chicken thighs with salt and pepper. Heat olive oil in a tagine or large skillet over medium heat and brown the chicken on both sides. Remove and set aside.
  2. Sauté Aromatics: In the same pan, sauté onions and garlic until softened. Add cumin, coriander, cinnamon, ginger, and paprika, stirring for a minute.
  3. Simmer: Return the chicken to the pan, add apricots, raisins, and chicken broth. Cover and simmer for about 30-40 minutes or until the chicken is cooked through.
