Main Ingredients:
- 4 slices thick sliced bacon, reserve drippings
- 1 lb baby Bella mushrooms, washed and dried
- 4 Tbsp real butter
- 1 teaspoon minced garlic
- 1 med. onion, diced
- 1 C white wine (substitute with chicken broth, if desired)
- 1 C cherry tomatoes, halved
- 1 tablespoon tomato paste
- 1 tablespoon Italian seasoning
- 1 tsp. salt
- 1/4 tsp. ground black pepper
- 1 pinch red pepper flakes
- 1 C heavy cream
- 1/2 C shaved Parmesan
- 3 C spinach
Instructions
- Cook Bacon: In a large skillet, cook bacon until crispy, then crumble and set aside.
- Sauté Mushrooms: In the same skillet with bacon drippings, add butter, garlic, and onion. Sauté until onions are translucent.
- Deglaze: Pour in white wine and simmer until reduced by half.
- Add Ingredients: Stir in cherry tomatoes, tomato paste, Italian seasoning, salt, pepper, and red pepper flakes.
- Finish Dish: Pour in heavy cream, Parmesan, spinach, and cooked bacon. Stir until spinach wilts and sauce thickens.
- Serve: Serve hot, garnished with additional Parmesan if desired.
Notes
- You can customize the dish by adding other vegetables like bell peppers or zucchini.
- For a lighter version, use half-and-half instead of heavy cream.
