Description

  • 4 slices thick sliced bacon, reserve drippings
  • 1 lb baby Bella mushrooms, washed and dried
  • 4 Tbsp real butter
  • 1 teaspoon minced garlic
  • 1 med. onion, diced
  • 1 C white wine (substitute with chicken broth, if desired)
  • 1 C cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 pinch red pepper flakes
  • 1 C heavy cream
  • 1/2 C shaved Parmesan
  • 3 C spinach

Instructions

  1. Cook Bacon: In a large skillet, cook bacon until crispy, then crumble and set aside.
  2. Sauté Mushrooms: In the same skillet with bacon drippings, add butter, garlic, and onion. Sauté until onions are translucent.
  3. Deglaze: Pour in white wine and simmer until reduced by half.
  4. Add Ingredients: Stir in cherry tomatoes, tomato paste, Italian seasoning, salt, pepper, and red pepper flakes.
  5. Finish Dish: Pour in heavy cream, Parmesan, spinach, and cooked bacon. Stir until spinach wilts and sauce thickens.
  6. Serve: Serve hot, garnished with additional Parmesan if desired.

Notes

  • You can customize the dish by adding other vegetables like bell peppers or zucchini.
  • For a lighter version, use half-and-half instead of heavy cream.
