- 2 teaspoons Italian Seasoning
- 1/2 cup all-purpose flour
- 3–4 Tablespoons olive oil
Sauce
- 2 1/2 cups chicken broth
- 1 chicken bouillon cube or 1 tsp better than bouillon
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 pinch red pepper flakes
- 1/3 cup white wine
- 3 cloves garlic, minced
- 1 Tablespoon tomato paste
- 1/3 cup sundried tomatoes, drained and chopped
- 2 Tablespoons cornstarch, plus 2 Tbsp. cold water
- 1/3 cup heavy cream
- 1 Tablespoon cream cheese, softened
- 1/2 cup Parmesan Cheese, grated
- 1 cup spinach
Instructions
- Prepare Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Coat with flour.
- Cook Chicken: In a skillet, cook chicken in olive oil until golden brown and cooked through. Remove from skillet and set aside.
- Make Sauce: In the same skillet, combine chicken broth, bouillon cube, onion powder, oregano, red pepper flakes, white wine, garlic, tomato paste, and sundried tomatoes. Simmer.
- Thicken Sauce: Mix cornstarch with cold water, then add to the sauce. Stir in heavy cream, cream cheese, and Parmesan. Add spinach.
- Finish Dish: Return chicken to the skillet, spoon sauce over chicken, and simmer until heated through.
- Serve: Serve Tuscan Chicken hot, garnished with extra Parmesan if desired.
Notes
- For a non-alcoholic version, substitute white wine with chicken broth.
- Adjust red pepper flakes to control the spiciness of the dish.
