Chicken

  • 2 large boneless skinless chicken breasts
  • Salt/Pepper
  • 2 teaspoons Italian Seasoning
  • 1/2 cup all-purpose flour
  • 34 Tablespoons olive oil

Sauce

  • 2 1/2 cups chicken broth
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 pinch red pepper flakes
  • 1/3 cup white wine
  • 3 cloves garlic, minced
  • 1 Tablespoon tomato paste
  • 1/3 cup sundried tomatoes, drained and chopped
  • 2 Tablespoons cornstarch, plus 2 Tbsp. cold water
  • 1/3 cup heavy cream
  • 1 Tablespoon cream cheese, softened
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup spinach

Instructions

  1. Prepare Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Coat with flour.
  2. Cook Chicken: In a skillet, cook chicken in olive oil until golden brown and cooked through. Remove from skillet and set aside.
  3. Make Sauce: In the same skillet, combine chicken broth, bouillon cube, onion powder, oregano, red pepper flakes, white wine, garlic, tomato paste, and sundried tomatoes. Simmer.
  4. Thicken Sauce: Mix cornstarch with cold water, then add to the sauce. Stir in heavy cream, cream cheese, and Parmesan. Add spinach.
  5. Finish Dish: Return chicken to the skillet, spoon sauce over chicken, and simmer until heated through.
  6. Serve: Serve Tuscan Chicken hot, garnished with extra Parmesan if desired.

Notes

  • For a non-alcoholic version, substitute white wine with chicken broth.
  • Adjust red pepper flakes to control the spiciness of the dish.
