Description

These Twice Baked Breakfast Potatoes are a delicious and filling morning meal that combines creamy mashed potatoes with crispy bacon, gooey cheese, and a perfectly cooked egg on top.

  • 2 medium russet potatoes, scrubbed and pricked with a fork all over
  • 2 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • 4 sliced cooked thick cut bacon
  • 4 medium eggs
  • ½ cup shredded cheddar
  • thinly sliced chives
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400˚F. Place potatoes directly on oven rack and bake for 40-45 minutes.
  2. Allow potatoes to cool, slice in half, and hollow out.
  3. Mash potato flesh with butter, cream, salt, and pepper.
  4. Fill potato skins with mixture, add cheese, bacon, and egg.
  5. Bake at 375˚F until eggs are set.
  6. Top with cheese, chives, salt, and pepper before serving.
