These Twice Baked Breakfast Potatoes are a delicious and filling morning meal that combines creamy mashed potatoes with crispy bacon, gooey cheese, and a perfectly cooked egg on top.

- 2 medium russet potatoes, scrubbed and pricked with a fork all over
- 2 tablespoons unsalted butter
- 3 tablespoons heavy cream
- 4 sliced cooked thick cut bacon
- 4 medium eggs
- ½ cup shredded cheddar
- thinly sliced chives
- salt and pepper to taste
Instructions
- Preheat oven to 400˚F. Place potatoes directly on oven rack and bake for 40-45 minutes.
- Allow potatoes to cool, slice in half, and hollow out.
- Mash potato flesh with butter, cream, salt, and pepper.
- Fill potato skins with mixture, add cheese, bacon, and egg.
- Bake at 375˚F until eggs are set.
- Top with cheese, chives, salt, and pepper before serving.
