For the Peanut Butter Mousse
- 350 grams silken tofu
- 3–4 tbsp smooth peanut butter to taste
- 3–4 tbsp agave syrup to taste
- 1 tsp vanilla paste or extract
- 1 pinch salt
For the Chocolate Ganache
- 100 grams 70% dark chocolate chips
- 400g tin full fat coconut milk (only the creamy part at the top)
Instructions
- Prepare the Peanut Butter Mousse: Blend silken tofu, peanut butter, agave syrup, vanilla, and salt until smooth.
- Make the Chocolate Ganache: Melt dark chocolate and mix with the creamy part of coconut milk until smooth.
- Layer the Mousse and Ganache: Alternate layers of the peanut butter mousse and chocolate ganache in serving glasses.
- Chill: Refrigerate for at least 2 hours before serving.
Notes
- You can adjust the sweetness of the mousse by adding more or less agave syrup.
- Feel free to top with crushed peanuts or chocolate shavings for an extra crunch.
