Main Ingredients:

  • 4 oz pancetta, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 pounds ground pork
  • Salt, to taste

Additional Ingredients:

  • 1 cup dry white wine
  • 2 cups chicken broth
  • 2 bay leaves
  • 10 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • ¼ tsp nutmeg
  • 2-inch parmesan rind
  • 1 cup whole milk

Instructions

  1. Sauté Pancetta: Cook diced pancetta until browned. Remove and set aside.
  2. Cook Vegetables: Sauté carrots, celery, and onion until softened.
  3. Brown the Pork: Cook ground pork and garlic until browned.
  4. Deglaze and Simmer: Add white wine, simmer until reduced.
  5. Add Broth & Herbs: Stir in broth, herbs, nutmeg, and parmesan rind. Simmer for 1 hour.
  6. Finish with Milk: Stir in milk and cook until sauce thickens.
  7. Final Touches: Skim grease, adjust salt, and serve over pasta.

Notes

  • Substitute ground beef or veal for pork.
  • Store in the refrigerator for up to 3 days or freeze for up to 3 months.
  • If no parmesan rind, add grated parmesan when adding milk.
