Main Ingredients:
- 4 oz pancetta, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 2 pounds ground pork
- Salt, to taste
Additional Ingredients:
- 1 cup dry white wine
- 2 cups chicken broth
- 2 bay leaves
- 10 sprigs fresh thyme
- 2 sprigs fresh rosemary
- ¼ tsp nutmeg
- 2-inch parmesan rind
- 1 cup whole milk
Instructions
- Sauté Pancetta: Cook diced pancetta until browned. Remove and set aside.
- Cook Vegetables: Sauté carrots, celery, and onion until softened.
- Brown the Pork: Cook ground pork and garlic until browned.
- Deglaze and Simmer: Add white wine, simmer until reduced.
- Add Broth & Herbs: Stir in broth, herbs, nutmeg, and parmesan rind. Simmer for 1 hour.
- Finish with Milk: Stir in milk and cook until sauce thickens.
- Final Touches: Skim grease, adjust salt, and serve over pasta.
Notes
- Substitute ground beef or veal for pork.
- Store in the refrigerator for up to 3 days or freeze for up to 3 months.
- If no parmesan rind, add grated parmesan when adding milk.
