- 4 oz pancetta, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 2 pounds ground pork
- Salt, to taste
- 1 cup dry white wine
- 2 cups chicken broth
- 1 cup whole milk
Seasonings:
- 2 bay leaves
- 10 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1/4 tsp nutmeg
- 2-inch parmesan rind
Instructions
- Cook Pancetta: In a large pot, cook the diced pancetta until crisp. Remove and set aside.
- Sauté Vegetables: In the same pot, sauté carrots, celery, onion, and garlic until softened.
- Add Meat: Add ground pork, season with salt, and cook until browned.
- Deglaze: Pour in white wine to deglaze the pot.
- Simmer: Add chicken broth, herbs, nutmeg, and parmesan rind. Simmer for 1-2 hours.
- Finish: Stir in milk and cooked pancetta. Simmer for additional 10-15 minutes.
- Serve: Remove herbs and parmesan rind before serving over pasta.
Notes
- This sauce can be made ahead and stored in the refrigerator for up to 3 days.
- Feel free to adjust the seasoning and thickness of the sauce to your preference.
