Cake:
- 1 cup flour (150g)
- 1 tsp baking powder
- ⅔ cup sugar (150g)
- ¼ cup cocoa powder (25g)
- 100g butter, melted
- ⅓ cup milk (80ml)
- 1 tsp vanilla essence
- 1 egg
White Chocolate Mousse:
- 1 tsp gelatine powder
- ½ cup sugar (110g)
- 2 cups fresh cream (500ml)
- 190g white chocolate
To serve:
- Raspberries
- Strawberries
- Icing sugar
- Fresh mint
Instructions
- Prepare the cake: Mix flour, baking powder, sugar, and cocoa powder. Add melted butter, milk, vanilla essence, and egg. Bake in a pan and let it cool.
- Make the white chocolate mousse: Dissolve gelatine in water. Heat sugar and cream until sugar dissolves. Add gelatine and white chocolate. Chill until set.
- Assemble: Place the mousse on the cake, refrigerate until firm. Serve with berries, mint, and a dusting of icing sugar.
Notes
- You can decorate the cake with additional whipped cream or chocolate shavings.
- Adjust the sweetness by varying the amount of sugar in the mousse.
