Description

Cake:

  • 1 cup flour (150g)
  • 1 tsp baking powder
  • ⅔ cup sugar (150g)
  • ¼ cup cocoa powder (25g)
  • 100g butter, melted
  • ⅓ cup milk (80ml)
  • 1 tsp vanilla essence
  • 1 egg

White Chocolate Mousse:

  • 1 tsp gelatine powder
  • ½ cup sugar (110g)
  • 2 cups fresh cream (500ml)
  • 190g white chocolate

To serve:

  • Raspberries
  • Strawberries
  • Icing sugar
  • Fresh mint

Instructions

  1. Prepare the cake: Mix flour, baking powder, sugar, and cocoa powder. Add melted butter, milk, vanilla essence, and egg. Bake in a pan and let it cool.
  2. Make the white chocolate mousse: Dissolve gelatine in water. Heat sugar and cream until sugar dissolves. Add gelatine and white chocolate. Chill until set.
  3. Assemble: Place the mousse on the cake, refrigerate until firm. Serve with berries, mint, and a dusting of icing sugar.

  • You can decorate the cake with additional whipped cream or chocolate shavings.
