Description

White Christmas Mojitos are a festive twist on the classic mojito, featuring a blend of lime juice, mint leaves, white rum, coconut rum, and coconut milk, topped with sparkling water and pomegranate arils for a refreshing and tropical flavor.

Main Ingredients:

  • 3/4 cup lime juice
  • 1/4 cup packed mint leaves plus extra for garnish
  • 1/2 cup sugar
  • 1/2 cup white rum
  • 1/2 cup coconut rum
  • 1 cup canned coconut milk
  • Sparkling water
  • Pomegranate arils

Instructions

  1. Prepare the Mint Syrup: In a small saucepan, combine mint leaves, sugar, and 1/2 cup of water. Bring to a simmer, stirring until sugar dissolves. Remove from heat and let cool.
  2. Make the Mojitos: In a pitcher, combine lime juice, white rum, coconut rum, coconut milk, and 1/4 cup of the mint syrup. Stir well.
  3. Serve: Fill glasses with ice, pour the mojito mixture over the ice, top with sparkling water, and garnish with mint leaves and pomegranate arils.

Notes

  • To make a non-alcoholic version, simply omit the rum and increase the amount of coconut milk.
  • You can adjust the sweetness by adding more or less mint syrup to taste.
