- 3/4 cup lime juice
- 1/4 cup packed mint leaves plus extra for garnish
- 1/2 cup sugar
- 1/2 cup white rum
- 1/2 cup coconut rum
- 1 cup canned coconut milk
- Sparkling water
- Pomegranate arils
Instructions
- Prepare the Mint Syrup: In a small saucepan, combine mint leaves, sugar, and 1/2 cup of water. Bring to a simmer, stirring until sugar dissolves. Remove from heat and let cool.
- Make the Mojitos: In a pitcher, combine lime juice, white rum, coconut rum, coconut milk, and 1/4 cup of the mint syrup. Stir well.
- Serve: Fill glasses with ice, pour the mojito mixture over the ice, top with sparkling water, and garnish with mint leaves and pomegranate arils.
Notes
- To make a non-alcoholic version, simply omit the rum and increase the amount of coconut milk.
- You can adjust the sweetness by adding more or less mint syrup to taste.
