These quick and easy air fryer quesadillas are filled with refried beans, peppers, onions, and cheese, then crisped up in just 10 minutes for a delicious meal or snack.

- 2 mini flour tortillas
- 2 Tbsp vegetarian refried beans
- 1/2 red pepper, diced
- 2 spring onions, sliced
- Small handful grated cheese (e.g., cheddar)
Instructions
- Spread the refried beans: Spread refried beans on half of each tortilla. Add peppers, onions, and cheese. Fold tortillas in half.
- Cook in air fryer: Place folded tortillas in air fryer, press down with an oven-proof item, and cook at 200°C for 5 minutes.
- Serve: Best served immediately.
Notes
- If you don’t have an air fryer, you can cook quesadillas on the stovetop.
