Description

These quick and easy air fryer quesadillas are filled with refried beans, peppers, onions, and cheese, then crisped up in just 10 minutes for a delicious meal or snack.


Ingredients

  • 2 Tbsp vegetarian refried beans
  • 1/2 red pepper, diced
  • 2 spring onions, sliced
  • Small handful grated cheese (e.g., cheddar)

Instructions

  1. Spread the refried beans: Spread refried beans on half of each tortilla. Add peppers, onions, and cheese. Fold tortillas in half.
  2. Cook in air fryer: Place folded tortillas in air fryer, press down with an oven-proof item, and cook at 200°C for 5 minutes.
  3. Serve: Best served immediately.

  • If you don’t have an air fryer, you can cook quesadillas on the stovetop.
