Description

These BBQ Chicken Flatbreads are a delicious and easy meal option that combines tender marinated chicken with gooey melted cheese on a crispy flatbread base, topped with veggies and a hint of BBQ sauce.

Main Ingredients:

  • 1 large boneless, skinless chicken breast, cut into small bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp sweet paprika
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt flakes
  • 1/2 tsp freshly cracked black pepper
  • 4 flatbreads
  • 60 ml (1/4 cup) BBQ sauce
  • 150 g (1 cup) shredded mozzarella
  • 1 small red onion, finely sliced
  • 1 small capsicum (bell pepper), finely sliced
  • 1 tbsp freshly chopped coriander (optional)

Instructions

  1. Marinate the chicken: Coat chicken in olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  2. Cook the chicken: Brown chicken in a pan until cooked through.
  3. Make the flatbreads: Preheat oven and spread BBQ sauce on flatbreads.
  4. Add toppings: Sprinkle mozzarella, cooked chicken, onion, and capsicum on flatbreads.
  5. Bake: Bake flatbreads until cheese is melted and bubbly.
  6. Serve: Garnish with coriander and enjoy!

  • Chicken can be cooked ahead and stored in the fridge.
