Main Ingredients:
- 2 Tbsp extra virgin olive oil
- 2 Tbsp unsalted butter, plus 2 Tbsp more to toss pasta
- 1 1/2 cups chopped onion
- 1 celery stalk, finely chopped
- 1 medium carrot, peeled and shredded
- 3 garlic cloves, minced
- 1 lb ground beef (20% fat)
- 1/2 tsp fine sea salt
- 1/4 tsp freshly ground black pepper
- 1 cup dry white wine or red wine
- 28 oz canned crushed tomatoes
- 1 1/2 cups hot water
- 2 Tbsp double-concentrated tomato paste or 4 Tbsp regular tomato paste
- 1/4 cup parsley or fresh basil
- 1/2 cup whole milk
To Serve:
- pappardelle or tagliatelle pasta
- Parmesan cheese
Instructions
- Sauté: In a Dutch oven, sauté onion, celery, carrots, and garlic until softened.
- Add ground beef: Cook until browned and add salt and pepper.
- Add wine: Deglaze the pot with wine.
- Form the sauce: Add tomatoes, water, tomato paste, parsley, and milk.
- Cook: Simmer for 1.5-2 hours until meat is tender.
Notes
- Substitute ground beef with a mixture of beef and pork or Italian sausage.
- Use red wine or beef stock instead of white wine.
- Cool completely before storing in the fridge for 3-5 days or freeze for up to 3 months.
