Description

This Bruschetta Recipe features a flavorful tomato topping with basil and garlic, served on crispy toasts brushed with garlic-infused olive oil and sprinkled with parmesan cheese. A perfect appetizer or snack for any occasion!

For the Tomato Bruschetta:

  • 6 Roma tomatoes, 1 1/2 lbs, diced
  • 1/3 cup basil leaves, chopped
  • 5 garlic cloves, divided
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • balsamic glaze (optional)

For the Toasts:

  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Make the Tomato Bruschetta Topping: Core and dice tomatoes, chop basil, mince garlic, mix with olive oil, balsamic, salt, and pepper, then let marinate.
  2. Make the Bruschetta Toasts: Preheat oven, slice and toast baguette, brush with garlic oil, sprinkle with parmesan, bake and broil.
  3. To Serve: Arrange toasts, spoon tomato topping, drizzle with olive oil and balsamic glaze.

Notes

  • For added flavor, you can drizzle balsamic glaze over the assembled bruschetta.
  • Make sure to drain excess juice from the diced tomatoes to prevent the bruschetta from becoming too watery.
